This headband is dedicated to the Assaultmen. The Assaultmen are good-naturedly considered the brainy grunts, because they are the jack of all trades, and 0351 MOS require higher test score than other 03 MOS. During Vietnam they were called Rockets, until the LAAW replaced the 3.5 rocket launcher. 0351 were then assigned to various grunt jobs and demolition. So I would say the biggest difference is they adapt quickly to new duties.
The symbol marks the Assaultman on the battlefield.
